Given the use that you describe, I'd recommend the following microphone -

Sony ECM-MS5

It's a compact stereo mic, easy to use, has an excellent signal to noise
ratio, great L/R imagery, and is not too expensive (ca. 200 pounds).

Whilst this may seem expensive, the quality of the recordings will be
heavily dependent on the quality of the microphone.
